One-Pan Lemon Herb Borlotti Beans and Sausage Sheet Pan Dinner

This sheet pan dinner is a weeknight lifesaver! Packed with protein and flavor from the Cirio Borlotti Beans and sausage, it's easy to prepare and requires minimal cleanup. The lemon herb marinade adds a bright and fresh touch, making this a satisfying and delicious meal.

Ingredients:

  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 pound Italian sausage links (sweet or hot, depending on your preference)
  • 1 (410g) can Cirio Borlotti Beans, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 1/4 cup chopped fresh parsley (optional)

Instructions to cook One-Pan Lemon Herb Borlotti Beans and Sausage Sheet Pan Dinner

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together olive oil, lemon juice, oregano, thyme, garlic powder, red pepper flakes (if using), salt, and pepper.
  3. In a large bowl, toss sausage links with half of the marinade.
  4. Spread sausage links, borlotti beans, bell peppers, and red onion on the prepared baking sheet. Drizzle remaining marinade over the vegetables.
  5. Bake for 20 minutes, then toss the vegetables and sausage. Add cherry tomatoes and bake for an additional 10-15 minutes, or until the vegetables are tender and the sausage is cooked through.
  6. Garnish with fresh parsley (optional), and serve immediately.

Tips:

Feel free to experiment with different vegetables. Broccoli florets, zucchini, and Brussels sprouts would all work well in this recipe.

  • If you don't have fresh herbs, you can substitute 1 teaspoon of dried oregano and 1/2 teaspoon of dried thyme.
  • For a vegetarian option, omit the sausage and increase the amount of borlotti beans to 1.5 cans. You can also add crumbled tofu or tempeh for extra protein.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
